Wow time is passing so fast guys and I have been so busy. Lets see where do I start? Well a full report will be posted about "The Red diamond Cake" and comments made throughout it's time at the show. The Red Diamond by EW Cake Designs, "The Cake Craftier"

The Legend

In the beginning years, before Christ but after Adam & Eve. The world was ciaos. Water was limited, plants wouldn’t grow, the order disturbed. There was no hope of survival for this world. This beautiful place, this gift would be no more. Disappointed and angered by this sight, The God drew thunder from the sky’s, rain from the dark clouds above and fire from the sun. In a breath of motion The God scooped a grain of sand from beneath his feet and with the softness of a whisper blew it onto the world. As the heavenly grain of sand traveled to the earth, it separated into bit of pieces. Hitting the contaminated floor of the earth. Over the days the grains of sand planted themselves into the earth, only to create the swampy forest area which is never to be found by man. In the mist of the forest, a red rock was formed, as it grew so did the two serpents that protected it, each keeping up with the other. In the days that came, the red rock sparkled, its beauty, indescribable, it’s strength, unknown . Also in the days that came the world became even more tarnished.
The world was DYING!!!
In the early morning one day, seconds before the dawn. The world was quiet. A light broke through the earth shining directly underneath the stone. As the light grew brighter, it warmed the stone, shaking, shinning through the belly of the swamp. A powerful, bright red light. The stone matured into a red, large diamond. As the serpents hissed and slithered around the diamond, their eyes hazed over pure white. The rumbling continued then… nothing….quiet only existed. The blind serpents slithered around each other into a circle around the red stone. As the serpents passed each other, they raised to form what seemed to be the shape of a heart, their heads looking over the stone. After a minute, the hissing began again, the stone seemed to melt and form at the same time. A form was building, growing, standing, looking, A MAN!!!
was born. The serpents seemed to bow their heads as they stopped the hissing. “My name is Othesies, I am The Red Diamond” the man spoke, the serpents raised their heads as their eyes turned to pure diamonds. “I was sent to restore peace and bring order to The Gift”
“When my task is done I will return and wait till I am needed again.”
It is rumored that “The Red Diamond” is set to mature within days.

The Rose Class Part 2 This Saturday June 6th 2010

This Saturday is EW Cake Designs "The Rose Class Pt 2". This is a bit more intricate than "The Rose Class Pt1". This class will be headed up by "The Cake Craftier", Chef Eric, and each decorator will be getting the hands on experience. Decorators will learn the technique to design individual roses, color technique, etc. Roses should look realistic when complete and stunning when arranged in a design.

That always sounds exciting and I am always thrilled.

Welcome to all of the new decorators that entered my Wilton Class last week and to all the decorators who waited for my return, thank you for being patient.

"The Basic Butter Cream" Class

Nothing taste better than, what I call, REAL BUTTER CREAM. It's light refreshing and irresistible all around.



This Saturday is "The Basic Butter Cream" Class. I love this class we will be learning to make delicious butter creams and learning a new technique to apply it to a cake. As usual there will be information on how to use these butter creams.

This is a butter cream iced cake that I found online at Sweet-n-Sassy Custom Cakes, as you can see this is a wonderful example of how to use butter creams to your advantage. Great job Sweet -n - Sassy.

Ingredients in Strange Places

Hello to all of you out there,



I just wanted to share this with you. I love to just roam through my gardens when I get a chance and take in the ingredients that make up a beautiful space.

Something many didnt know is that I personally select rose petals along with herbs to create an aroma to die for. Thats right I make a lovely tea at the end of the day using my organic flowers and herbs. This will be the first tonight, but I decided to also make myself a nice arragemen to look at as I sip the evening away.

A Preview: The Bow Class


What a wonderful day, EW Cake Designs did a preview "Bow Making" class which will be released early next year (2011).
Everyone was impressed with the elegance of this bow, fitting to any occasion and a show stopper for cake designs. Decorators was frazzled at the amount of work to make this bow, but the results are stunning leaving all speechless.

Spring is Here and The Cake Season is Booming


As most of you know, I have been running around like all get out. This is the season for refreshing deserts, cool icy drinks and most of all cakes.


That's just the beginning of spring. Summer will be here as soon as the weather figures out what it wants to do. This is a time where you can get many asking you to make cake, cupcakes and all other kind of goodies for them and their event. Just remember, consider the time you will have to do these things, in other words, calculate your time wisely, this is your summer too and many of you might want to go out and play too. You can easily lose your whole summer to baking and you don't want to do that.


June is bringing about lots of exciting changes, stay posted for those, remember as soon as I get the information I am able to get it to you.


May 1st I will be doing "The 8hr Fondant Seminar", make sure you sign up early, they only allow 10 people maximum for individual attention and don't forget your hour lunch is paid for. This is also great way to also meet other local decorators.


Chef Eric Williams TIP NOTE:
In my classes, I require at 4" high on cakes, this is pretty much the starting number, you can go higher and of course if your design calls for something else then I suggest adjusting your sizes.
To get a professional height on your cakes, fill your baking pans at least half way full of batter and this should be in at least two separate pans.


Student Comment:

Chef Eric, I could only find an 8' round pan that was 2" high, so I could not make my cake 4" high.


Chef Eric:

If you have a baking pan that only rises to 2" in height and you need a 4" high cake, 2"+2"= 4",

bake two cake, remember in order to be successful, you must have on your thinking caps.

This is a display of an elegant cake, Charlene scaled down this design to cater to a smaller crowd. I the colors stunning and the flowers really accent the cake itself, its almost like the jewelery a fine Lady would put on before going to a exquisite dinner party.

Ingrid's Birthday Bash

As most of you know I don't party, but this weekend was a wonderful friend and my assistance, Ingrid, birthday bash. I couldn't miss that.

We surprised her with my arrival and a cake. It was so nice to see her face light up.

Then the food. Oh my god, there was food everywhere and it was the good stuff, I almost camped outside so when I woke up this morning I could just knock on the door and start eating again. There was literally two tables of food. I was in heaven.

I met some of the nicest people there I really felt welcomed and I even danced several times, can you imagine that, but yes one of Ingrid's friends draged me out on the floor and I have to admit, it was soooo much fun.

Thanks to all of you who made me feel so good last night. Sorry but no pictures of me getting down with my bad self. Lol

"The 8hr Fondant Seminar" Febuary 13th 2010

The morning was beautiful as the sun came up, something we truly wanted after so much rain, not to say we don't want the rain, but that the break is nice.


Our seminar was scheduled for 10am. As the decorators loaded in and began to set up their tables, the chatter started, it was wonderful to see.


After a brief introduction, we promptly got started. We started with the flower making portion and it was amazing to see the decorators at work. Making detailed petals, hand forming the petals then attaching them was a site to see creating these masterpieces.


Our break consisted of much talk, I got a chance to sit down and exchange stories with the decorators. What I found to be nice is that each of them had their own goals for taking this seminar for whatever reason. Just goes to show you the power of food. These decorators was so inspired that their energy was bouncing off the walls.


By the second portion of the seminar things was jumping, we was making fondant, tasting fondant, stating what we liked and what we didn't like, covering cakes and too much more to even put into this blog. Thinking we would be tired after 8hrs that was a total misjudgment, we all left with so much energy, personally I think these decorators are just one big ball of energy, each, I love them. Thank you all for your passion, I don't see that a lot theses days.

I just took the February 13,2010 class seminar. I can't tell you how much I enjoyed it and how appreciative I am of the course. There were only four of us attending. I felt that I had a knowledgeable instructor that cared about me and what I was doing.
I plan on taking more classes with Eric. But most of all it was fun. The time sped away as no one watched the time. We were learning and having fun doing it.

The AV Press Article

Today was the day we was expecting the article to hit in the AV Press Newspaper, there was an introduction to this weeks article which stated the interview with me would be listed in this weeks newspaper paper. Well sorry to say that didn't happen and as all of you are, I am extremely disappointed and hurt, but as the life of business has taught me, that's they way the ball bounces, and now its how you choose to use the ball once you get it. So we will move on and chalk it up an experience and wish everyone well.

I am so sorry that I had all of you out there looking for this article, but this is one time it is truly out of my hands.

A Yellow Cake

For sometime now I have been asked for a yellow cake recipe that is moist. This is a recipe that I thought you guys might like. Let me know what you think of it, so far I have only gotten great feed back, remember always practice your cakes first before doing them for a job or a special presentation, everyone is different and we all have different taste make sure this recipe is right for you.

A SimpleYellow Cake
2 1/4 cups all-purpose flour (do not sift the flour)
1 1/2 cups granulated sugar
3 1/2 teaspoons baking powder
1-teaspoon salt
1 1/4 cups milk
Vegetable oil
1 stick butter (not margarine), softened
2-tablespoon vanilla extract
1-tablespoon butter flavoring
3 large eggs

Preheat oven to 350°Cut wax paper to fit the bottom of (3) 9 x 1 1/2-inch round pans. Spray the pans with cooking spray, place the wax paper in the pans and spray the paper. In a large mixing bowl combine the flour, sugar, baking powder and salt, mixing well. Measure the 1-1/4 cups of milk in a 2 cup measuring cup….then add enough vegetable oil to bring the liquid up to 1-1/3 cups. Add the milk/vegetable oil mixture, butter and vanilla to the flour mixture and beat with an electric mixer on medium to medium-high speed for 2 minutes, scraping sides of bowl as needed. Add the eggs and continue beating an additional 2 minutes. Pour batter into prepared pans. Bake at 350° for 20 to 25 minutes or until a wooden pick inserted near center of cake comes out clean, or until cake springs back when touched lightly in the center.Cool cakes on wire racks for 15 minutes; remove from pans and cool completely.

My Wilton's "Valentines Day Cookie" Demo

It was a rainy day heading out to set for this wonderful event. There was a lot to do just to set up. These were the things running through my mind as I am driving to my destination. Arriving there was no easy task either, by the time I was parking, It was pouring down raining. I gathered my supplies and headed into the building.

Struggling to get to my demo spot, I was approached my area and an employee pulled me to the side and said "Chef" there's a lady here waiting for you, I found that a bit odd but figured she was there for the demo as a guest. Well........... to my surprise. I turned around and........


It was Stephine, one of my most decorators, surprising me to come and decorate with me. I was truly touched, I had no idea she was planning this.

Stephine set up shop with her supplies, then pulled out theses gorgeous , precisely cut cookies and with all the details. So many people stopped and insisted they were store bought, but no they were simply from her oven at home. Stephine is fine example of what I inspire decorators to do, try your best then refine it to your design.


She decorated her cookies so eloquently. Stephine has a quality that many people posses but never nurture it, shes doing great and it is such a wonderful thing to see.

Hello Decorators,


Welcome back and as always thank you for reading. As you know my decorators have been pumping out cakes like crazy these days. One decorator somehow got thoroughly inspired, by what she wont reveal to me, but decided to create her first masterpiece. I was really concerned by this when she told me of her plan to create this piece, why was I concerned you might ask? Well because she's kind of a NUT!!!!, I know this because we are constantly having lunch together, so basically we are a lot alike in some ways, like talking out of our heads. And yes the waiters just stares at us, all the time. Anyway she did her research for weeks, found designs and put them together for her 5th cake for her final lesson in that particular course.


Her hard work shows and I am proud instructor. This is what my classes are all about "The Inspiration", if you let me, I will be your muse and hopefully inspire you to reach beyond what you think you can do. This is what this decorator did and somehow I had a little bit to do with it.
I am a happy instructor. now just wait till she get more knowledge of decorating, unstoppable.

There are a few things to note.
Always check your class schedule due to cancellations, this does not happen often but we always want to keep in communication with you, always sign up early because class sizes are limited. Please know that we take pride in our teachings and we do not over book our classes, we want each and every decorator to get the individual attention as promised. Also make absolutely make sure that you sign up at least 72hrs before your class, this is to ensure that you will receive your printed certificate from EW Cake Designs. Only the names on this 72hr pre-sign-up list will receive this certificate. Hello There / My Awesome Decorators !!!!

Hello Everyone,


Yes it has been some time since I last posted, but so much is happening, it all seems crazy to me, but it is all for you. More classes will be posted in the next few weeks, so remember to sign up early in order to reserve your spot. The next class is an 8hr fondant seminar held February 13th 2010. your one hour lunch is paid for an your syllabus will be e-mailed to you once you have paid for your spot. You can reserve your spot by e-mailing ewcakecraftier@aol.com. Hopefully soon you will be able to do all things needed once the web-site is up. That's taking time do to the fact that it will be very detailed. Exciting, I can't wait to see everything in action. You can also email EW Cake Designs with any questions, a nice addition. Look for my interview with The Antelope Valley Press hitting stands January 27th 2010. That was so much fun I cant wait to tell you all about it. Stay tuned for that in an upcoming blog.
